I’m often asked how to make an eggless frittata and find the question difficult to answer since, strictly speaking, there’s no such thing as a frittata that contains no eggs. However, I recently came accross the video below which involves a frittata made primarily with eggplant (aubergine in the UK), and would make a perfect substitute for those on an egg free diet for whatever reason.
It’s not often that I would describe a recipe as ‘entertaining’, but what I enjoyed about this as much as the recipe itself was watching Victoria Squillante, the old lady doing the cooking. I thought she was a proper star, and can hardly believe she’s eighty three. Over to you, Victoria…
