This is a simple and easy frittata recipe with an unusual visual appeal. The ‘spokes’ of the wagon wheel are created from sausages in this instance, but you could use asparagus spears instead for a vegetarian version.
Ingredients:
6 eggs, beaten, seasoned to taste with a little added salt and pepper
4 cooked sausages, sliced in half lengthwise
1 small onion, chopped
Small bunch of chives, chopped
150g Cheddar cheese, grated
150g Red Leicester cheese, grated
Oil for frying
Method:
Keep the sausages warm or warm through from cold under a low grill while you cook the rest of the frittata. Gently fry the onion until soft. Add the Cheddar cheese and the chives to the eggs, mixing well, and then pour into the pan. Cook on a low heat for ten minutes or so until nearly set through. Turn up the grill, sprinkle the Red Leicester cheese evenly over the frittata and arrange the sausages – cut side down – in a pattern resembling spokes radiating from the centre of a wagon wheel. Grill until the cheese is bubbling and golden.
Nice served cut into wedges with canned baked beans.
