These mini frittata appetizers will make a tasty change (or can even be served in addition to) the traditional pumpkin pie at your Halloween party. Why not be different this year?
Ingredients:
3 eggs
150g grated pumpkin
Small red pepper, finely chopped
2 cloves garlic, finely chopped
150g cooked rice
50g Mozzarella cheese, finely chopped
100ml milk
A quarter of a teaspoon of dried nutmeg
A quarter of a teaspoon of dried cinnamon
Olive oil for frying
Method:
Beat the eggs in a large bowl and add the milk, nutmeg and cinnamon. Lightly fry the pumpkin, pepper and garlic for two or three minutes. Drain off any excess oil and add to the egg mixture. Stir in the rice and cheese, then spoon the mixture into a greased twelve cup bun tin and bake in a medium oven for 20-30 minutes until set. Allow to cool slightly and remove from the tin.
