One of the more unusual cheese frittata recipes, Racy Red Frittata gets it’s name from the ingredients of red onion, red pepper and Red Leicester cheese that it includes, as well as a little chili powder and cayenne.
Ingredients:
25g butter
2 tablespoons oil
2 small red onions, sliced
Half a red pepper, seeded and cut into thin slices
100g Red Leicester cheese, grated
6 eggs, beaten
A quarter of a teaspoon each of chili powder and cayenne pepper.
1 teaspoon salt
1 teaspoon freshly ground black pepper
Method:
Heat the butter and the oil in a heavy based frying or frittata pan. Gently fry the onions and pepper until soft. Add the eggs, chili powder and cayenne pepper, salt and pepper to the pan, and stir in the grated cheese. Cook over a medium heat until the frittata looks almost set. Slide it from the pan on to a large plate, upturn the pan over it and then flip back over into the pan so that you can cook the other side for a few more minutes.
This is nice cut into wedges and served with garlic bread.
