Tuna And Asparagus Frittata: A Valentines Day Aphrodisiac

With Valentines Day fast approaching, there’s no better way to start it off than with a romantic breakfast in bed for two with a Valentine’s Day Tuna And Asparagus Frittata, packed with tuna, asparagus, garlic and basil – all of which are reputed to have aphrodisiac properties.  Like any other frittata, the beauty of it is that you can prepare it the day before and refrigerate until required, so there’s no need to spend the morning in the kitchen if you’d rather be snuggling up to that special someone instead.

Ingredients:

6 eggs, beaten

75ml double cream

185g tin of flaked tuna, drained

Bunch of asparagus, washed, trimmed and thinly sliced

2 cloves of garlic, minced or finely chopped

A handful of fresh basil, finely chopped

4 slices of processed cheese

Butter for frying

Method:

First, take the cheese slices and cut a large heart shape from each, using a biscuit cutter or a knife. Set to one side, keeping the hearts separate so that they don’t stick together. Lightly fry the asparagus and the garlic in in the butter for 1-2 minutes. Stir the cream, tuna and basil into the eggs and then add to the pan, distributing the ingredients evenly. Cook on a low heat until the frittata is almost set through, then carefully arrange the cheese hearts on the top and finish under the grill for a minute or two until the cheese is bubbling and golden.

Serve with champagne and a seductive smile!
