Summer Spinach Frittata

This delightful spinach Frittata is ideal for using your fresh garden produce, taking it from plant to plate in less than thirty minutes for maximum nutritional value.

Cooking Time: 20 minutes

Serves: 6

Ingredients:

1 medium onion, chopped

1 clove garlic, minced

2 medium tomatoes, chopped

1 tablespoon vegetable oil

½ teaspoon Italian seasoning

¼ teaspoon black pepper

½ teaspoon salt

6 eggs, lightly beaten

250g spinach

75g strong cheddar cheese, grated

Method:

Gently fry the onion, garlic, and tomatoes in oil until tender. Add the Italian seasoning, pepper and salt to the beaten eggs and then add to the vegetables in the pan. Stir in the spinach and grated cheese, being careful to distribute everything evenly.

Cook on a low heat for fifteen minutes or until firm. Serve cut into wedges with a crisp, green salad.
